PROBIOTIC BERRY AND COCONUT YOGURT ROLL-UPS

Fruit roll ups that are actually healthy!
Fruit roll-ups (fruit leather or fruit straps) can be easily made at home in a food dehydrator. Like everything you make at home, you are in control of the ingredients, and that’s key.
As a mum, I’ve always been concerned about commercial fruit roll-ups being marketed as ‘healthy’ snacks for kids. The truth is store bought roll-ups are so high in sugar they could be considered confectionary. Really!
Berries are naturally a low sugar fruit, and so are perfect for kids. Be sure of no additional sugar, colour or preservatives by making your own. It really is so easy.
Adding homemade coconut yoghurt to the berry mix will give your littlies a secret dose of probiotic goodness. One great feature of Luvele’s fabulous new and improved food dehydrator is the two low temperature settings that retain the probiotic quality of cultured foods. This is real bonus when you want to create a nutritious snack. My children love them!
If you are an old hand at dehydrating, you may find the lower temperature setting on the new Luvele dehydrator requires slightly more drying time. This is fine – your berry roll-ups will not spoil left in for 24 hours or more.
If you want to save time though, you should consider the moisture content in your mixture before you dehydrate. If using frozen berries, defrost them first and remove any excess water. Also, include thick, set, yoghurt and avoid the watery content.
These berry roll-ups are a combo of blueberries and raspberries, but you can use any berries you like. I also left the seeds in and no-one complained!
- 1 cup blueberries (fresh or frozen and defrosted)
- 1 cup raspberries (fresh or frozen and defrosted)
- ½ cup of coconut yoghurt (avoid the coconut water)
- 2 teaspoons of lemon juice
- 1 tablespoon honey, maple or rice malt syrup (optional)
1. Combine all the ingredients in a high-speed blender until well combined.
2. Pour the mixture onto 2 x fruit roll-up trays and spread with a spatula to get an even coverage.
3. Place the trays into the dehydrator trays, stack and put the lid on and set the dehydrator at speed 2 (this is approx. 42 degrees Celsius)
4. Leave to dehydrate for around 24 hours. Your batch may require slightly more or less time depending on the moisture in the mixture and the thickness.
5. When the fruit easily peels and is not sticky, it is done.
6. Slice the roll ups into strips with a sharp knife or cut with scissors. Sticky areas may be put back into the dehydrator for further drying.
Store in a cool place, sealed in a glass container or jar for 1 week. In warm weather, probiotic fruit roll-ups will need to be kept in the fridge.
